When you don’t know what to fix, you could make this super simple pasta salad, even a non-cook like myself can make.
All you need is cooked pasta (rotini or spirals are my favorite to use), fresh broccoli, shredded cheddar cheese (Kraft is the best) and Kraft Good Seasonings salad mix.
Make up the Good Seasonings Salad dressing as directed on the package. I always like to add a little bit more vinegar to make it tangier. Chill for about a half hour.
Cook the pasta, about 2 cups dried is what you need for a large salad. Use just one cup if you want a pasta salad for 2 to 3 people.
Drain and then chill the pasta in the refrigerator for about an hour.
Clean the broccoli and then microwave it in a bowl for about 30 seconds to take some of the hardness away. You don’t want to cook it, only soften it a bit. You may need to put it in the microwave for one minute but don’t over do it.
Add the broccoli and shredded cheese to the pasta in a large bowl. Mix with a large spoon to get everything evenly mixed. Then add the Good Seasonings salad dressing and stir until everything is coated.
You may want to add some salt and pepper to taste.
For a complete meal add some pieces of grilled chicken breast.
I love this simple paste meal. It is great anytime of the year. It works well for picnics in the summer or to eat during the Winter with a meat side like a hamburger.
