Cilantro Chili Chicken Skewers

These wings are a nice twist on the buffalo wing and the recipe is simple

This recipe is from Cooking Hawaiian Style #1, page 73

Ingredients:

  • 2 pounds boneless/skinless chicken thighs or breast meat
  • 1/4 cup extra virgin olive oil
  • 6 cloves garlic, mince
  • 3/4 bunch fresh cilantro (save remaining for garnish)
  • 1 teaspoon salt & pepper
  • Sweet chili sauce for basting

Cooking Directions:

Soak skewers in water for at least 20 minutes to prevent burning.

Cut chicken into 1″ cubes and place into bowl.  Add olive oil, garlic and cilantro in a food processor and pulverize. Pour the marinade into the bowl with the chicken, add teaspoon of salt and pepper and marinate over-nite if possible.

Preheat the grill to medium heat and coat with oil. Remove chicken from the refrigerator and put 5-6 pieces of chicken on each skewer.  Cook for 4-5 minutes on each side. Brush chili sauce on chicken just before done cooking to create a nice glaze.

Chef Jeff Vigilla whips up this amazing salmon dynamite recipe on the fly – He had 1 hour to come up with a menu from leftovers in our Cooking Hawaiian Style kitchen and this is what he came up with – Brilliant!

This recipe is from Cooking Hawaiian Style Cookbook #2, page 132

Ingredients:

  • 2 lbs. salmon fillet, trimmed to fit onto the cedar plank
  • 1 cedar plank, 12″ x 6″ soaked in water for 15 minutes, remove pat dry

Brine Ingredients:

  • 4 cups water
  • 1/4 cup salt
  • 1/4 cup sugar

Salmon Dynamite Topping:

  • 1-1/2 cup mayonnaise
  • 2 tablespoon scallions, fine sliced
  • 1 tablespoon pickled ginger, chopped fine
  • 2 teaspoon sriracha chili sauce
  • 1 tablespoon lemon juice

Cooking Directions:

mix together the ingredients for the brine. Place the salmon into a large deep container or baking pan. Pour the brine over the salmon and refrigerate for 25 minutes. After 25 minutes remove the salmon and pat dry.

Place the salmon fillet onto the cedar Plank. Spread topping onto the salmon covering the entire surface. Place the prepared salmon onto a large baking pan and bake in a 350 degree pre-heated oven for 20-25 minutes till golden. Garnish with additional pickled ginger, tobiko, sliced scallions and serve.

To get the most of your Cuisinart Citrus Juicer, slice fruit in half. Press the fruit down firmly on top of juicer. Lift up momentarily and the juicer reverses the direction for better juicing. After about 15 to 30 seconds, your fruit half is completely juiced. Nothing will be left inside but the rind. The juice drains out the front spout. After juicing about a pound of fruit, you have to use the “final spin” feature, by putting the cover on and pressing the whole unit down. This activates a dryer-like spin cycle and squeezes lots of remaining juice from the pulp. There is almost no fruit left inside the rind after it juices it so there is no waste.

Here’s an example of what you can expect to get from the Cuisnart Citrus Juicer. Two oranges will get you about 16 oz. of orange juice, which is two cups. It does depend on the size of your oranges. And as an added note, room temperature fruit yields more juice.

To Cleanup: take the cover, juicer, and juice catcher off. Rotate the juicer part to separate it. Rinse off all pieces and toss them in the dishwasher. Cleanup is quick and easy! You can even take it all apart, rinse, and toss it in the dishwasher. No problems whatsoever.

Easy Mini Chicken Pot Pie Recipe

Ingredients:

  • a can of Pillsbury Grand rolls
  • frozen mixed vegetables
  • one can Cream of Chicken Soup
  • One chicken breast
  • Shredded Cheddar Cheese
  • Salt and Pepper

Instructions:

  1. Pre-heat the oven at 375.
  2. Grease or use spray oil in an 8-muffin tin pan.
  3. Roll Pillsbury Grands dough onto the counter or cutting board until they are each about 5 inches in size.
  4. Place the dough in the muffin tins.
  5. Cook a chicken breast and then cut it up into bite-sized pieces. You can use a skillet or even cook it in the microwave to make it faster.
  6. In a medium-size bowl, combine a half a bag of mixed veggies, a half can of cream of chicken soup and about a handful or more of precooked chicken pieces. Add a little salt and pepper. Stir until everything is blended.
  7. Spooned mixture into muffin tins and top off with a little shredded cheddar cheese.
  8. Bake for 20 minutes.
